Black Bean Corn Salad
Serve Cold/ Mix All Together/10 Minute Prep Time/ Yields: 8 servings
· 2 cans of black beans
· ½ - 1 bag of frozen corn
· ½ of a large red onion finely chopped
· 1 teaspoon of salt
· 1 whole bunch of cilantro chopped
· 1 cup of cherry or grape tomatoes sliced in halves
· 2 limes squeezed
· 1 orange bell pepper (optional)
· 1 avocado cubed (optional)
Lentil Quinoa Bowl
Serve Hot/ Served All Together in a bowl/10 Minute Prep Time/ 45 minute cook time/ Yields: 8 servings
- 2 cups of uncooked lentils rinsed
- 2 cups of uncooked quinoa
- 8 cups of chopped broccoli (frozen or fresh)
- 8 large carrots
- 2-3 lemons or a ½ cup of lemon juice
- 2 tablespoons of garlic powder
- 2 teaspoon of salt
- 1 pinch of pepper
- 6 - 8 teaspoons of olive oil
- Tahini sauce (optional)
- Cut and peel carrots into a mixing bowl with 4 teaspoons of olive oil and sprinkle in the salt, pepper and garlic powder. Roast on baking sheet for 45 minutes in oven at 400 degrees Fahrenheit
- Bring 4 cups of water to a boil and cook quinoa for 15-20 minutes and stir occasionally
- Bring 4 cups of water to a boil and cook lentils for 15-20 minutes and stir occasionally
- Steam broccoli until ready (Microwave or stove top steamer)
- Assemble all cooked ingredients in bowl and mix 1 teaspoon of salt with 2-4 teaspoons of olive oil and a ½ cup of lemon juice and pour over bowl. Drizzle bowl with tahini (optional)
